Coco loco chocolate crackle and peanut caramel slice

Ingredients:
  • 150g (1 cup) plain flour
  • 25g (1/4 cup) cocoa, (see Top tips) plus extra, to dust
  • 175g unsalted butter, softened
  • 55g (1/4 cup) caster sugar
  • 2 x 380g cans Caramel Top 'N' Fill
  • 190g (2/3 cup) smooth peanut butter
  • 50g pretzel sticks
  • 150g dark chocolate melts, melted
  • 45g (1/3 cup) roasted salted peanuts
  • 50g (1/2 cup) cocoa (see Top tips)
  • 240g (1 1/2 cups) icing sugar
  • 175g (5 cups) rice bubbles
  • 200g unsalted butter, melted
Instructions:
  • Preheat your oven to 180C and prepare your pan by greasing it, then lining the base and sides with baking paper.
  • Combine cocoa and flour in a bowl. Cream butter, sugar, and salt until fluffy. Mix in flour mixture until just combined. Press into pan and bake for 25 minutes until firm. Cool before moving on to the next step.
  • In a small saucepan over medium heat, combine caramel and peanut butter. Stir until mixture boils and becomes smooth. Continue stirring for 2 more minutes. Spread the filling over the base and refrigerate for 4 hours or freeze for 2 hours until firm.
  • For crackle balls, start by lining a tray with baking paper. Next, sift cocoa and sugar into a large bowl. Mix in rice bubbles by hand until coated. Add butter and stir well to combine. Shape tablespoons of mixture into balls using wet hands, compacting firmly. This recipe makes about 70 balls. Place the balls on a tray and refrigerate for 20 minutes until firm.
  • Prepare a baking tray with parchment paper. Dip the pretzels in melted chocolate, then use a knife to remove any excess chocolate. Place the chocolate-covered pretzels on the lined tray and let them sit for 5 minutes to allow the chocolate to set.
  • Arrange the balls in rows on top of the filling and sprinkle with peanuts. Cut into 16 squares, place 2 chocolate pretzels on each square, and dust with extra cocoa before serving.
