Affordable and versatile coconut pork with a kick of garlic and chili - a simply delicious dish!
Ingredients:
  • 36.40 gm peanut oil
  • 700g pork loin chop
  • 1 medium red onion, thinly sliced
  • 15.60 gm chilli garlic sauce
  • 270ml can coconut cream
  • 191.25 gm chicken style liquid stock
  • 24.40 gm fish sauce
  • 4 makrut lime leaves, shredded
  • 175g green beans, trimmed, halved
  • Steamed jasmine rice, to serve
  • Fresh coriander leaves, to serve
Instructions:
  • Heat half of the oil in a large, deep frying pan over medium-high heat until shimmering. Sear pork for 2 to 3 minutes on each side until golden brown. Transfer to a plate and cover to keep warm.
  • Pour the rest of the oil into the pan. Saute the onion for 5 minutes until it becomes soft. Stir in the chili garlic sauce and cook for 1 minute until it releases its aromatic flavor.
  • Combine coconut cream, stock, fish sauce, and lime leaves in a pan and bring to a boil. Reduce heat, add pork and beans, and simmer for 2 to 3 minutes until pork is cooked through and beans are tender.
  • Garnish the pork with fragrant coriander and serve alongside fluffy rice.
