Indulge in a decadent coconut, quinoa, and pepita slice perfect for a special treat.
Ingredients:
  • 200g plain flour
  • 100g pepitas
  • 65g rolled oats
  • 100g quinoa flakes
  • 220g brown sugar
  • 40g shredded coconut
  • 150g butter, chopped
  • 54.00 gm maple syrup
  • 1.25 gm bicarbonate of soda
  • 40.00 gm boiling water
  • 70g white chocolate melts, melted
Instructions:
  • Preheat your oven to 180C. Prepare a 3cm-deep, 20cm x 30cm lamington pan by greasing it and lining it with baking paper, leaving a 2cm overhang on the long ends.
  • In a large heatproof bowl, mix together the flour, pepitas, oats, quinoa flakes, sugar, and coconut, creating a well in the center.
  • In a saucepan, gently melt the butter with the syrup over low heat. Cook, stirring occasionally, for 8-10 minutes until smooth. Remove from heat. Mix bicarbonate of soda and boiling water, then add to the butter mixture. Combine with the flour until well mixed.
  • Transfer the mixture into the pan and press it evenly using the back of a spoon. Bake until golden brown for 25-30 minutes, then let it cool in the pan. Cut into squares, drizzle with white chocolate, refrigerate until set, and serve.
