Coconut and banana skewers

Delicious BBQ dessert: Coconut banana marshmallow skewers with chocolate dip.
Ingredients:
  • 200g dark chocolate, chopped
  • 126.25 gm thickened cream
  • 32.00 gm brown sugar
  • 600g banana
  • 24 white marshmallows
  • olive oil cooking spray
  • 32.50 gm shredded coconut, toasted
Instructions:
  • Combine chocolate, cream, and sugar in a microwave-safe bowl. Microwave on high for 1-2 minutes until smooth, stirring every 30 seconds with a metal spoon. Transfer to another bowl.
  • Skewer bananas and marshmallows onto 8 sticks, then give them a quick spray with cooking oil.
  • Preheat a barbecue plate or chargrill over medium heat. Grill skewers for 3 minutes, or until banana is golden brown. Sprinkle with coconut and serve with chocolate mixture.
