Elevate your pancakes with vibrant berries and tropical coconut for a delicious twist.
Ingredients:
  • 155.00 gm spelt flour
  • 252.50 gm light coconut milk
  • 2 eggs, separated
  • 16.80 gm coconut oil
  • Fresh berries, or frozen berries, to serve
  • Maple syrup, to serve
Instructions:
  • Preheat your oven to 150C and prepare a tray with baking paper.
  • Sift flour into a bowl and create a well in the center. Whisk in the combined milk and eggs until the batter is smooth with bubbles forming. Allow it to rest for 20 minutes.
  • Whisk egg whites in a clean, dry bowl until stiff peaks form, and gently fold them into the batter.
  • Preheat a frying pan on high heat and coat it with coconut oil. Pour one ladle of batter into the pan to create a 12cm circle. Cook for 2-3 minutes until bubbles form on the surface. Flip and cook for an additional minute on the other side.
  • Place the mixture on a baking sheet and keep it warm in the oven. Repeat the cooking process with the rest of the batter. Present with fresh berries and a generous drizzle of maple syrup.
