Grilled kale marinated in coconut milk and lime juice for a tasty twist that's bursting with flavor.
Ingredients:
  • 2 (13.5 ounce) cans coconut milk
  • 2 limes, juiced
  • 1 teaspoon sea salt
  • 1 teaspoon cayenne pepper
  • 0.5 teaspoon red pepper flakes, or to taste
  • 2 bunches kale, leaves separated, stems discarded
Instructions:
  • Gently warm coconut milk in a saucepan until just lukewarm, approximately 5 minutes. Transfer to a spacious glass bowl. Mix in lime juice, paprika, sea salt, cayenne pepper, and red pepper flakes until the marinade is silky.
  • Coat kale with marinade, ensuring every leaf is well-covered. Seal the bowl with plastic wrap and refrigerate for 4 hours.
  • Heat up your outdoor grill until it reaches a medium-high temperature and lightly oil the grate. Take the kale out of the marinade, shake off any extra marinade, and discard the rest.
  • Grill kale leaves in batches until edges are crispy and centers are soft, 45 to 60 seconds per side.
