Ingredients:
  • 2 large ripe mangoes
  • 13.60 gm of maple syrup
  • Lime rind strips, to serve
  • 1 x 400 ml can light coconut milk
  • 160ml (2/3 cup) apple and peach juice (no added sugar)
  • Zest and juice of 1 lime
  • 40.50 gm maple syrup
Instructions:
  • In a bowl, mix together coconut milk, apple juice, peach juice, lime zest, lime juice, and maple syrup until well combined for refreshing lime & coconut ice.
  • Transfer the mixture to a non-aluminum container suitable for freezing. Freeze for 6 hours or until just frozen, stirring occasionally with a fork to break up ice crystals.
  • Process the mixture until smooth using a hand blender or scoop it into a food processor and process until smooth. Transfer it back to the freezer container, cover, and freeze for an additional 2 hours until it becomes firm.
  • Trim the cheeks off the mangoes and then score the flesh into diamond shapes. Brush them with maple syrup and place them cut-side up on an oven tray. Grill them under a hot grill for 2 minutes or until they turn lightly brown and fragrant, or place them cut-side down on a preheated chargrill pan.
  • Assemble mango on plates. Serve lime and coconut ice in bowls, topped with lime rind. Serve alongside mango immediately.
