Indulge in affordable bananas for dessert with coconut and vanilla cream.
Ingredients:
  • 55g (3/4 cup) shredded coconut
  • 125ml (1/2 cup) thickened cream
  • 6.00 gm icing sugar
  • 2.20 gm vanilla essence
  • 60ml (1/4 cup) honey
  • 6 just-ripe bananas, peeled, thickly diagonally sliced
Instructions:
  • Toast coconut in a small non-stick pan over medium heat, stirring often, for 1-2 minutes until golden. Remove from pan and let cool on a plate. (Check microwave tip for quicker option.)
  • Whip cream, icing sugar, and vanilla essence in a medium bowl with electric beaters until stiff peaks form. Let it sit for later use.
  • Warm the honey in a large non-stick frying pan over medium heat. Add the bananas and coat them evenly. Cook for 1-2 minutes until bananas are warm. Mix in the coconut. Serve the banana mixture in individual bowls with a dollop of vanilla cream.
