Warm and comforting soup made with coconut milk, black beans, tomatoes, ginger, cumin, and turmeric. Perfect for chilly days.
Ingredients:
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (14 ounce) can coconut milk
  • 1 cup vegetable broth
  • 2 green onions, chopped, or more to taste
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cumin
  • 1 tablespoon ground turmeric
  • 2 cloves garlic, minced, or more to taste
  • salt to taste
Instructions:
  • In a large saucepan, let black beans, tomatoes, coconut milk, broth, green onions, ginger, cumin, turmeric, and garlic mingle and come to a boil. Simmer until the mix reaches your preferred thickness, about 30 to 45 minutes. Finally, add salt to taste.
