Tropical Coconut Black Bean Soup

Quick and delicious tropical pureed soup, perfect with a dollop of sour cream or crumbled banana chips on top!
Ingredients:
  • 1 (15.5 ounce) can Mexican-seasoned black beans
  • 1 (14 ounce) can light coconut milk
  • 1 (6 ounce) package frozen green peas
  • 2 cups chicken stock or water
  • 1 tablespoon fresh lime juice
Instructions:
  • Combine black beans, coconut milk, peas, and stock/water in a large saucepan. Bring to a boil, then simmer for 10 minutes. Blend until smooth, then stir in lime juice before serving.
