Tropical coconut pineapple pancakes for a weekend brunch escape to Hawaii.
Ingredients:
  • 1.6666667461395 cups buttermilk
  • 0.5 cup milk
  • 2 tablespoons butter, melted
  • 1.6666667461395 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 pinch salt
  • 1 (20 ounce) can pineapple tidbits, drained
  • 1 cup sweetened flaked coconut, or more to taste
  • 0.75 cup macadamia nuts, chopped
  • 0.66666668653488 cup white chocolate chips
  • cooking spray
Instructions:
  • In a large bowl, whisk together buttermilk, milk, eggs, butter, and vanilla extract until smooth. In a separate bowl, mix flour, baking powder, baking soda, and salt, then gently fold into the buttermilk mixture until just combined. Be careful not to overmix the batter.
  • Drain the pineapple with a paper towel. Prepare individual bowls for pineapple, coconut, macadamia nuts, and chocolate chips.
  • 1. Preheat a skillet over medium heat and spray with cooking spray. Add 1/3 cup of batter for each pancake, then top with pineapple, coconut, nuts, and chocolate. Cook until bubbles form and edges are dry, approximately 3-4 minutes. Flip and cook until browned, about 2-3 minutes. Repeat with remaining batter.
