Asian salad with pineapple-marinated chicken and red bell peppers.
Ingredients:
  • 0.25 cup DOLE® Pineapple Juice
  • 1 tablespoon soy sauce
  • 1 teaspoon packed brown sugar
  • 1 clove garlic, finely chopped
  • 2 (8 ounce) boneless, skinless chicken breasts
  • 1 (10.7 ounce) package DOLE Asian Island Crunch™ Salad Kit
  • 1 cup red bell pepper, thinly sliced
  • 0.25 cup DOLE Red Onion, thinly sliced
Instructions:
  • In a small saucepan, mix pineapple juice, soy sauce, brown sugar, and garlic with 1 tablespoon of the sesame ginger dressing. Bring to a boil, then simmer until reduced by two-thirds.
  • Preheat the grill or grill pan over medium-high heat and lightly brush with oil or non-stick vegetable cooking spray.
  • Brush the chicken with the flavorful pineapple mixture, then grill the chicken, rotating it once and basting as needed, for 10 to 12 minutes until fully cooked in the center.
  • Slice the chicken, then combine the salad blend and accompaniments in a large bowl. Toss everything together with the remaining dressing.
  • Plate the salad beautifully and garnish with colorful bell peppers, flavorful onions, and succulent chicken pieces.
