Embrace the flavors of Polynesia by swapping thousand-island dressing for a refreshing coconut-milk blend on your salad greens.
Ingredients:
  • 60ml (1/4 cup) light coconut milk
  • 5.30 gm fresh lime juice
  • 1.53 gm fish sauce
  • 3 Lebanese cucumbers
  • 200g baby spinach leaves
Instructions:
  • Combine the coconut milk, lime juice, and fish sauce in a small bowl, whisk until smooth, then season with pepper.
  • Peel the cucumbers lengthwise into ribbons using a vegetable peeler. Arrange the spinach and cucumber on a serving platter, then drizzle with the dressing.
