Make quick and delicious satay beef using pantry staples like peanut butter, coconut milk, soy sauce, and sugar.
Ingredients:
  • 300g (1 1/2 cups) basmati rice
  • 40g (1/4 cup) sesame seeds, toasted
  • 20.00 ml rice wine vinegar
  • 16.00 gm brown sugar
  • 20.00 gm water
  • 2 Lebanese cucumbers, halved lengthways, thinly sliced diagonally
  • 1 long fresh red chilli, halved, seeded, thinly sliced
  • 3 (about 800g) beef scotch fillet steaks, thinly sliced
  • Olive oil spray
  • 82.50 ml fresh mint leaves
  • 9.20 gm vegetable oil
  • 1 small red chilli, seeded, finely chopped
  • 70g (1/4 cup) crunchy peanut butter
  • 80ml (1/3 cup) coconut milk
  • 60ml (1/4 cup) water
  • 4.00 gm brown sugar
  • 10.60 gm soy sauce
  • 10.60 gm fresh lemon juice
Instructions:
  • Begin by heating oil in a small saucepan over medium heat. Sauté the onion until soft, approximately 5 minutes. Add the chili and garlic, and cook for 30 seconds until aromatic. Finally, mix in the peanut butter, coconut milk, water, sugar, soy sauce, and lemon juice. Continue to cook for 2-3 minutes until the flavors have melded together perfectly.
  • While the rice is cooking as per the packet instructions, mix in the sesame seeds. Combine vinegar, sugar, and water in a bowl until the sugar dissolves. Add cucumber, chili, and mint, then mix well.
  • Skewer the beef onto 12 soaked bamboo skewers and heat a barbecue flat plate or large frying pan over medium-high heat. Spray the beef with oil and cook for 2-3 minutes on each side for a medium doneness or until it reaches your preferred level of doneness.
  • Serve rice, beef, and salad on individual plates. Finish by elegantly drizzling sauce on top.
