Customizable whole-grain waffle recipe with 3 delicious variations.
Ingredients:
  • 1 cup white whole wheat flour
  • 0.75 cup all-purpose flour
  • 2 tablespoons white sugar
  • 1 tablespoon baking powder
  • 0.25 teaspoon salt
  • 1.75 cups refrigerated unsweetened coconut milk beverage
  • 0.5 cup canola oil
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 0.5 cup plain coconut milk yogurt
  • 0.5 cup toasted unsweetened coconut chips
  • 8 teaspoons agave nectar
Instructions:
  • Combine the flours, sugar, baking powder, and salt in one bowl. Mix together the coconut milk, oil, eggs, and vanilla in a separate bowl.
  • Create a crater in the flour mixture and swiftly add the egg mixture. Gently mix until just combined, leaving some lumps in the batter.
  • Preheat waffle iron following manufacturer's guidelines.
  • Grease the hot waffle iron and pour 1/2 cup of batter onto it. Close the iron and cook until waffle is golden brown with no more steam coming out, for 3 to 5 minutes. Repeat with the rest of the batter to make more waffles.
  • Drizzle each waffle with a dollop of creamy yogurt, sprinkle with coconut chips, and finish with a drizzle of sweet agave nectar.
