Get the kids involved in making delicious coconut crunch snacks together!
Ingredients:
  • 125g butter or margarine
  • 110g (1/2 cup) sugar
  • 4.40 gm vanilla essence
  • 1 egg
  • 185g (1 1/4 cups) self-raising flour, sifted
  • 90g (1 cup) desiccated coconut
  • 45g (1 1/2 cups ) Corn Flakes, crushed
Instructions:
  • Preheat your oven to 180°C and prepare a baking tray with non-stick baking paper.
  • In a medium bowl, use electric beaters to whip together butter, sugar, and vanilla essence until light and fluffy. Mix in the egg. Gently stir in the flour and coconut using a metal spoon until well combined.
  • Form tablespoon-sized portions of the mixture into balls and coat them by rolling in crushed Corn Flakes. Arrange them on the baking tray, spacing them about 7cm apart, and bake in a preheated oven for 15 minutes until golden and cooked. Let them rest on the tray for 2-3 minutes before transferring to a wire rack to cool. Repeat the process with the rest of the mixture and Corn Flakes.
  • Keep in a sealed container for freshness for a week.
