Guam coconut biscuits

Delightful coconut cookies for all ages to enjoy.
Ingredients:
  • 150g unsalted butter, at room temperature, cubed
  • 220g (1 cup) caster sugar
  • 4.40 gm vanilla essence
  • 1 tsp almond extract
  • 1 egg, at room temperature
  • 260g (2 cups) cornflour
  • 150g (1 cup) plain flour
  • 100g (1 1/2 cups) shredded coconut
  • 20.20 gm coconut cream
Instructions:
  • Preheat the oven to 180°C and line 2 baking trays with non-stick baking paper.
  • Beat together the butter, sugar, vanilla essence, and almond extract with electric beaters in a medium bowl until pale and creamy.
  • Crack the egg into the mixture and beat until well combined. Next, sprinkle the cornflour and plain flour over the butter mixture. Add 65g (1 cup) of coconut and the coconut cream. Use your hands to mix everything together and knead until a firm dough forms.
  • Shape each 2-teaspoon portion of dough into a 10cm sausage on a lightly floured surface, joining the ends to form a circle. Place on a lined tray. Repeat with the rest of the dough.
  • Sprinkle the biscuits with the rest of the coconut. Bake in a preheated oven for 30 minutes while swapping trays halfway through, or until the coconut turns a light golden color and the biscuits are fully cooked. Let them cool on the trays.
