Ingredients:
  • 1 (3 pound) whole chicken
  • 1 coconut, drained and meat grated
  • 2 lemons, juiced
  • 1 bunch green onions, chopped
  • 3 tablespoons dried red pepper flakes
  • salt to taste
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C). Nestle a whole chicken into a roasting pan and let it sizzle in the oven for an hour, or until the leg wiggles freely. Take it out, let it cool a bit, and get ready to enjoy!
  • Peel off and discard the chicken skin. Pull apart the meat from the bones and chop into small pieces. Dispose of the bones and transfer the chopped chicken into a large bowl. Mix in green onions and grated coconut. Drizzle generously with lemon juice. Season with salt and red pepper flakes. Adjust the levels of lemon juice, salt, and red pepper flakes to balance the flavors.
