Elevate traditional chicken piccata with a decadent touch of white wine, lemon, butter, and mushrooms.
Ingredients:
  • 2 tablespoons milk
  • 1 teaspoon salt
  • 0.5 teaspoon paprika
  • 6 skinless, boneless chicken breast halves
  • 4 tablespoons butter
  • 0.5 pound fresh mushrooms, sliced
  • 0.25 cup chopped onion
  • 1 cup chicken broth
  • 0.5 cup white wine
  • 2 tablespoons lemon juice
  • 1 tablespoon cornstarch
  • 1 tablespoon chopped fresh parsley, for garnish
Instructions:
  • In a shallow bowl, whisk together the egg and milk. In another shallow bowl, combine the flour, salt, and paprika. Dip the chicken into the egg mixture, allowing excess to drip off, then coat both sides in the flour mixture by pressing gently.
  • In a large skillet over medium-high heat, melt butter. Cook chicken until golden brown, about 2 to 3 minutes per side. Then add mushrooms and onion, and sauté for an additional 3 to 5 minutes.
  • Combine broth, wine, lemon juice, and cornstarch in a bowl. Pour mixture over chicken and mushrooms. Simmer on medium-low heat until chicken is fully cooked and juices run clear, about 25 minutes. Use a thermometer to ensure internal temperature reaches 165°F (74°C). Finish with a sprinkle of fresh parsley before serving.
