Coconut-ice stars and trees

Create festive coconut biscuits for special occasions.
Ingredients:
  • 250g copha
  • 500g desiccated coconut
  • 1 x 750g pkt icing sugar mixture
  • 4 egg whites, lightly whisked
  • 125ml (1/2 cup) coconut cream
  • 2-3 drops red liquid food colouring
  • 2-3 drops green liquid food colouring
Instructions:
  • Place non-stick baking paper in the base and two opposite sides of two 20cm square cake pans, letting it slightly overhang.
  • Melt the copha in a saucepan over low heat and let it cool slightly for 5 minutes.
  • Separate the desiccated coconut, icing sugar, and egg white evenly into 2 bowls. In one bowl, add half of the copha, half of the coconut cream, and red food coloring. Stir until mixture is well combined and colored evenly. Divide the pink coconut mixture among the prepared pans and press it evenly over the base, smoothing the surface.
  • Layer the rest of the coconut mixture, copha, coconut cream, and green food coloring. Press gently over the pink coconut ice and ensure the surface is smooth.
  • Chill in the fridge for 2 hours, covered with plastic wrap, until set.
  • Take out of the refrigerator and let sit for 10 minutes to warm up. Use a 4cm star-shaped pastry cutter and a 4cm Christmas tree-shaped pastry cutter to cut out 24 shapes from each pan.
