Indulge in cozy Golden Milk - a vegan Indian drink with coconut milk, ginger, and turmeric, perfect for winter.
Ingredients:
  • 1 (13.5-ounce) can full fat coconut milk
  • 1 to 2 tablespoons freshly grated ginger, to taste (from a 2-inch size knob)
  • 1 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • Pinch fine sea salt
  • Pinch ground black pepper
  • 2 teaspoons maple syrup
  • Cinnamon sticks and/or ground cinnamon or turmeric, to serve (optional)
Instructions:
  • Gently warm the coconut milk in a small saucepan over medium-low heat until you see a slight steam, approximately 2 to 3 minutes.
  • Combine the ginger, turmeric, cinnamon, sea salt, and black pepper in the milk and whisk gently. Add the vanilla extract and whisk again. Cool the milk slightly off the heat, then stir in the maple syrup. Taste and adjust as needed: more ginger for spice, extra maple syrup for sweetness, or another pinch of salt for bolder flavor.
  • Simmer the golden milk until you see bubbles on the sides of the pot and some frothy action on the surface. This step helps blend the flavors after adding maple syrup and adjusting spices, ensuring a hot beverage.
  • Strain off any remaining fibrous bits of ginger through a fine mesh sieve into your favorite mug. Sprinkle with a little more ground turmeric and/or cinnamon, then get cozy on the couch with a blanket and enjoy.
