Creamy dairy-free golden milk ice cream infused with coconut milk, coconut cream, turmeric, ginger, and toasted spices.
Ingredients:
  • 1 (14 ounce) can coconut milk
  • 0.66666668653488 (8 ounce) can coconut cream
  • 1 (1 1/2 inch) piece fresh ginger, peeled and sliced
  • 1 (2 inch) piece fresh turmeric root, peeled and grated
  • 2 tablespoons coconut oil
  • 0.5 vanilla bean, halved lengthwise
  • 0.25 cinnamon stick
  • 10 cardamom pods
  • 0.5 teaspoon black peppercorns
  • 3 tablespoons honey
  • 1 (1/2 inch) piece fresh ginger, peeled and grated
  • 0.125 teaspoon ground turmeric
  • 0.125 teaspoon cayenne pepper
Instructions:
  • Combine creamy coconut milk, rich coconut cream, delicate slices of ginger, vibrant fresh turmeric, luscious coconut oil, and a fragrant split vanilla bean in a bowl, setting the mixture aside for later.
  • In a mortar, gently crush cinnamon stick, cardamom pods, and peppercorns with a pestle until cinnamon stick is broken, cardamom pods have split open, and peppercorns are slightly crushed.
  • Pour the cinnamon mixture into a saucepan over gentle heat. Gently stir to bring out the wonderful aromas of the spices. Take off the heat.
  • Carefully pour the coconut milk mixture into the saucepan, ensuring it remains at a gentle temperature. Stir in the honey thoroughly. Allow the mixture to rest at room temperature for approximately 15 minutes. Then, refrigerate until it cools, yet the coconut oil remains in liquid form, for about 10 minutes.
  • Strain out the sliced ginger and cardamom pods from the mixture and discard them. Remove the vanilla bean, scrape out the paste, and add it to the milk. Discard the vanilla bean pod. Use an immersion blender to blend the mixture until smooth.
  • Transfer the coconut milk mixture into an ice cream maker and freeze following the manufacturer's directions for approximately 20 minutes. Stir in the fresh grated ginger during the final 5 minutes of churning. Transfer the ice cream to an airtight container and freeze until it reaches a firm consistency, approximately 4 hours.
  • Sprinkle with ground turmeric and ground cayenne for added flavor and color.
