Chewy gumdrop cookies with oatmeal, coconut, pecans, and sweet gumdrops for a perfect blend of flavors.
Ingredients:
  • 1 cup shortening
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt
  • 2 cups rolled oats
  • 1 cup flaked coconut
  • 1 cup chopped pecans
  • 1 cup gumdrops, chopped
Instructions:
  • Preheat the oven to 375°F (190°C) and lightly grease the cookie sheets.
  • In a large bowl, use an electric mixer to cream shortening and sugars until light and fluffy. Beat in eggs one at a time, mixing well after each addition. Stir in vanilla. In a separate bowl, combine flour, baking powder, baking soda, and salt, then gradually stir into the creamed mixture until combined. Add oats, coconut, pecans, and gumdrops. Roll dough into walnut-size balls, place 2 inches apart on prepared cookie sheets, and gently flatten with a floured fork.
  • Bake in the preheated oven for 8 to 10 minutes, then cool cookies on the sheets for 5 minutes before transferring to a wire rack to cool completely.
