Indulge in velvety coconut jelly with a medley of juicy fruits.
Ingredients:
  • 400ml can coconut milk
  • 300ml thickened cream
  • 75g caster sugar
  • 2 tsp coconut essence
  • 9.00 gm powdered gelatine
  • 80ml lime juice
  • 1 lime, zested
  • 53.75 gm caster sugar, extra
  • 1/2 medium red papaya
  • 2 bananas
  • 250g punnet strawberries
  • 2 kiwifruit
Instructions:
  • Combine coconut milk, cream, and sugar in a pan over low heat. Stir until dissolved. Bring to a boil, then remove from heat and stir in the essence.
  • Combine gelatine in 1/4 cup of hot water until fully dissolved. Whisk it into the hot milk, then pour the mixture into a dish. Refrigerate until firm.
  • In a small saucepan, gently warm the lime juice and extra sugar until the sugar is completely dissolved. Allow the mixture to cool before stirring in the lime zest.
  • Dice the fruit and mix it with half of the syrup. Serve the fruit with jelly and drizzle the remaining syrup on top.
