Whip up a refreshing coconut jelly infused with fragrant pandan leaf, perfect for a make-ahead sweet treat.
Ingredients:
  • 2 young coconuts
  • 5 tablespoons white sugar, or to taste
  • 1 pandan leaf, knotted
  • 2 teaspoons agar-agar powder
Instructions:
  • Crack open coconut shells to collect the refreshing coconut water in a saucepan. Remove the flesh from the shell using a strong knife, peel off the skin, and slice it for use.
  • Combine sugar and fragrant pandan leaf in a saucepan with coconut water. Heat over medium heat, then add agar-agar powder and stir until dissolved. Finally, mix in sliced coconut flesh.
  • After taking the mixture off the heat, elegantly remove the pandan leaf. Gently pour into individual cups or ramekins. Allow it to cool to room temperature for 15 to 20 minutes. Refrigerate until set, approximately 30 minutes. Serve chilled for a delightful treat.
