Coconut Macaroon Brownies

Decadent brownies with coconut filling, a hit at political events, social gatherings, and anniversaries.
Ingredients:
  • 1 cup butter, softened
  • 2 cups white sugar
  • 4 eggs
  • 1.5 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 0.75 teaspoon cream of tartar
  • 0.5 cup chopped walnuts
  • 4 cups unsweetened flaked coconut
  • 1 (14 ounce) can sweetened condensed milk
  • 1 tablespoon vanilla extract
Instructions:
  • Preheat your oven to 350°F (175°C) and prepare a 9x13 inch baking pan by greasing and flouring it.
  • Cream the butter and sugar in a large bowl until light and fluffy. Add the eggs one at a time, then mix in 1 1/2 teaspoons of vanilla. In a separate bowl, combine the flour, cream of tartar, and cocoa, then gently fold it into the egg mixture until fully combined. Lastly, fold in the walnuts and spread half of the mixture into the prepared pan.
  • Prepare the decadent middle layer by combining coconut, sweetened condensed milk, and 1 tablespoon of vanilla in a medium bowl. Gently spread this mixture over the luscious chocolate layer in the pan and finish by topping it off with the remaining chocolate batter, spreading it evenly to cover.
  • Bake in a preheated oven for 45 to 50 minutes until the top loses its shine. Allow the bars to cool in the pan before cutting.
