PEEPS® Coconut Macaroon Brownies

Decadent chocolate coconut brownies, a crowd-pleasing dessert bar.
Ingredients:
  • 1 box Betty Crocker™ Fudge Brownie Mix
  • Water, vegetable oil and eggs called for on brownie mix box
  • 2 cups flaked coconut
  • 2/3 cup canned sweetened condensed milk (not evaporated)
  • 1/4 teaspoon almond extract
  • 1/4 cup semisweet chocolate chips
  • 1/4 teaspoon vegetable oil
  • 12 PEEPS® Delights™ coconut flavored marshmallow chicks dipped in chocolate
Instructions:
  • Preheat the oven to 350°F (or 325°F for dark or nonstick pan). Line a 9-inch square pan with foil, leaving an overhang; lightly grease the bottom with cooking spray. Follow the instructions on the box to make the brownie batter. Pour the batter into the pan. Bake for 36 to 38 minutes or until a toothpick inserted 2 inches from the side comes out nearly clean.
  • In a medium bowl, combine coconut, sweetened condensed milk, and almond extract. Once the brownies are out of the oven, evenly spread the coconut mixture over them. Bake for an additional 14 to 17 minutes until the coconut is lightly browned. Allow to cool completely for about 2 hours, then lift the brownies out of the pan using the foil.
  • Place chocolate chips and 1/4 teaspoon oil in a small microwavable bowl. Microwave uncovered on High for 30 to 60 seconds, stirring halfway, until chips can be stirred smooth. Transfer chocolate to a resealable food-storage plastic bag and seal. Cut a small tip from the corner of the bag and drizzle chocolate over coconut mixture. Top with chicks and let sit for about 30 minutes until chocolate sets. Cut into 4 rows by 3 rows to serve.
