Indulge in a creamy coconut mocha frappe - a tantalizing blend of coconut, chocolate, and cold coffee for a refreshing treat.
Ingredients:
  • 0.25 cup shredded coconut
  • 1 cup coffee ice cubes
  • 0.5 cup cold coffee
  • 0.5 cup coconut milk beverage (such as Silk®)
  • 3 tablespoons chocolate syrup, divided
  • 1 packet stevia sugar substitute (such as Truvia®)
  • 1 tablespoon fat-free whipped topping
Instructions:
  • Toast coconut in a skillet over gentle heat, stirring until golden brown, about 3 to 4 minutes. Reserve 1/2 teaspoon for garnish.
  • In a blender, combine toasted coconut, coffee ice cubes, coffee, coconut milk, 2 tablespoons chocolate syrup, and sweetener. Blend until smooth and frothy. Pour into a large glass and garnish with whipped topping, reserved toasted coconut, and a drizzle of chocolate syrup.
