Hawaiian-style butter mochi: Sweet, tropical rice cake made with coconut milk and vanilla.
Ingredients:
  • 3.5 cups sweet rice flour (mochiko)
  • 2.5 cups white sugar
  • 2 tablespoons baking powder
  • 5 eggs
  • 1 teaspoon coconut extract
  • 2 cups milk
  • 1 (14 ounce) can coconut milk
  • 0.5 cup melted butter
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • Combine rice flour, sugar, and baking powder in a mixing bowl and whisk until well blended; set aside.
  • In a separate mixing bowl, whip together eggs, coconut extract, and vanilla until smooth. Add in milk, coconut milk, and melted butter, whisking until combined. Gradually stir in the flour mixture until smooth. Pour the batter into the baking dish and level the surface.
  • Bake until the mochi turns a beautiful golden brown, approximately 1 hour. Let it cool to room temperature before cutting into 24 pieces for serving.
