Decadent chocolate coffee nut cake.
Ingredients:
  • 1.75 cups all-purpose flour
  • 0.25 cup unsweetened cocoa powder
  • 1 tablespoon instant coffee granules
  • 1 cup butter, softened
  • 0.5 cup white sugar
  • 2 teaspoons vanilla extract
  • 2 cups finely chopped pecans
  • 1 cup confectioners' sugar for rolling
Instructions:
  • Preheat the oven to 325°F (165°C). Combine flour, cocoa, coffee crystals, and salt in a bowl; set aside.
  • In a large bowl, beat the butter, sugar, and vanilla until light and fluffy. Add the dry ingredients and mix until just combined. Fold in the pecans. Shape the dough into 1-inch balls and arrange 2 inches apart on an ungreased cookie sheet.
  • Bake in a preheated oven for 15 to 20 minutes until lightly browned on the bottoms. Roll in confectioners' sugar while warm and store in a covered container at room temperature.
