Indulgent low-sugar mocha cake with equivalent of 1/2 cup white sugar in substitute.
Ingredients:
  • 0.75 cup hot water
  • 1 tablespoon instant coffee powder
  • 0.33329999446869 cup packed brown sugar
  • 12 (1 gram) packets artificial sweetener
  • 1 egg
  • 1.5 cups all-purpose flour
  • 0.33329999446869 cup unsweetened cocoa powder
  • 2 tablespoons dry milk powder
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt
  • 0.25 cup chopped walnuts
Instructions:
  • Mix the hot water and instant coffee together and set aside.
  • Combine flour, cocoa powder, dry milk, baking powder, and salt, whisking until well blended.
  • Cream together butter, brown sugar, and sugar substitute in a large bowl with an electric mixer until light and fluffy. Add egg and vanilla, beat for 1 minute. Alternate mixing in flour mixture and coffee until combined. Stir in nuts and beat until smooth. Pour batter into a greased 9-inch square pan.
  • Bake at 350 degrees F (175 degrees C) for around 30 minutes or until the cake naturally releases from the sides of the pan. Allow it to cool on a wire rack.
