Ingredients:
  • 400g can sweetened condensed milk
  • 100g brown sugar
  • 50g unsalted butter
  • 2 tsp coffee & chicory essence*
  • 100g walnut halves, toasted, roughly chopped
  • 200g dark chocolate
  • 225g (1 1/2 cups) plain flour
  • 4.00 gm baking powder
  • 80g brown sugar
  • 150g butter melted
  • 1 tsp coffee & chicory essence*
Instructions:
  • Preheat your oven to 180°C. Grease and line two 7 x 25cm bar pans with baking paper for easy clean-up and perfectly cooked treats.
  • In a bowl, sift together flour and baking powder. Add sugar and pour in butter and half of the coffee essence. Mix until well combined. Divide the mixture evenly between pans, pressing it firmly into the base. Bake in the oven for 20 minutes, then allow it to cool slightly.
  • In a saucepan over low heat, combine condensed milk, brown sugar, butter, and coffee essence. Stir constantly for approximately 10 minutes until the mixture thickens.
  • Top pastry bases generously with crunchy walnuts, evenly spread half of the luscious caramel filling on each base, and bake for 10-12 minutes until the filling is bubbling at the edges. Let cool completely.
  • Gently melt chocolate and remaining coffee essence in a bowl over simmering water (make sure bowl doesn't touch water). Pour over caramel, tilting the pan for an even coating. Allow it to cool and set before slicing.
