Indulge in a quick and easy coffee-infused dessert in just 10 minutes!
Ingredients:
  • 60g butter, softened
  • 118.80 gm brown sugar
  • 99.00 gm self-raising flour, sifted
  • 32.50 gm Cocoa Powder, sifted
  • 32.00 gm brown sugar, extra
  • 125.00 gm water, boiling
  • 2 tsp instant espresso coffee
  • 4 small scoops vanilla ice-cream
  • 0.63 gm NESTLÉ BAKERS' CHOICE Cocoa, extra, to serve
Instructions:
  • With an electric mixer, blend the butter and sugar until fully combined. Mix in the flour and half of the cocoa until incorporated. Then, stir in the buttermilk.
  • Pour the mixture evenly into four 1 1/2-cup microwave-safe mugs.
  • In a small bowl, mix the remaining cocoa powder and extra sugar together. Sprinkle this mixture over the puddings. In a small heatproof jug, combine water and coffee, stirring until the coffee granules are completely dissolved. Gently pour this mixture over the puddings.
  • Place 2 mugs in microwave, 20cm apart. Cook on MEDIUM (50%) for 2 1/2 minutes until just cooked through. Cook remaining puddings. Serve with vanilla ice-cream and dust with extra cocoa powder.
