Decadent butter mochi cake inspired by Japanese red bean mochi - rich, buttery, and easy to make. A Western twist on the classic dessert with added ingredients like butter, milk, eggs, and vanilla, then baked to perfection.
Ingredients:
  • 0.5 cup unsalted butter, melted
  • 1.25 cups white sugar
  • 3 cups rice flour
  • 1 teaspoon baking powder
  • 3 cups milk
  • 1 (18.75 ounce) can sweetened red bean paste
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease either a 9-inch Bundt pan or a 9x13 inch baking pan.
  • Combine butter, sugar, eggs, vanilla, and milk in a large bowl. Mix in rice flour and baking powder. Transfer batter to pan. Drop small spoonfuls of red bean paste on top of the batter to avoid sinking.
  • Bake in the preheated oven for 1 hour and 10 minutes, or until the cake springs back when lightly touched. If using a Bundt pan, invert the cake onto a serving plate and let it cool completely before unmolding to maintain its shape. Serve small slices of this decadent cake at room temperature or slightly warmed.
