Indulgent Hawaiian mochi - a sweet and chewy treat made with mochiko flour, coconut milk, and butter.
Ingredients:
  • 1 (16 ounce) box mochiko (sweet rice flour)
  • 2 cups white sugar
  • 2 teaspoons baking powder
  • 0.25 teaspoon ground cinnamon
  • 2 teaspoons vanilla extract
  • 1 (14 ounce) can coconut milk
  • 1 (12 fluid ounce) can evaporated milk
  • 0.5 cup unsalted butter, melted and cooled
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously grease a 9x13-inch pan.
  • Combine mochiko, sugar, baking powder, and cinnamon in a large bowl.
  • Combine eggs and vanilla extract in a small bowl and whisk until well mixed.
  • Combine eggs with the mochiko mixture and blend thoroughly. Add coconut milk and evaporated milk, mixing until well combined. Gently fold in melted butter until batter is silky and smooth.
  • Transfer the batter into the greased pan and give the pan a few taps on a flat surface to even out the batter.
  • Bake in the preheated oven for about 50 minutes until the top is golden brown. Allow it to cool for approximately 30 minutes before slicing.
