Delicious mochi muffins with rice flour and coconut milk - perfect for breakfast, snack, or dessert!
Ingredients:
  • 2 cups glutinous sweet rice flour (such as Mochiko)
  • 3/4 cup packed brown sugar
  • 1/4 cup white sugar
  • 1 (14-ounce) can unsweetened coconut milk
  • 1/4 cup butter, melted
  • 2 teaspoons vanilla extract
  • 2 teaspoons pure maple syrup
  • 1 teaspoon sesame seeds
  • 1 teaspoon black sesame seeds
Instructions:
  • Prepare all your fresh, high-quality ingredients for a culinary masterpiece.
  • Preheat the oven to 350°F (175°C) and prepare a 12-cup muffin tin with paper liners or grease generously.
  • In a bowl, combine rice flour, sugars, baking powder, and salt, and whisk until well blended.
  • Combine coconut milk, eggs, melted butter, vanilla extract, and maple syrup in a large bowl. Gently fold in the flour mixture until just combined.
  • Scoop batter into muffin cups, filling them almost to the top, then generously sprinkle with sesame seeds.
  • Bake until a toothpick comes out clean, for 40 to 45 minutes. Let it cool in the pan on a wire rack for 10 minutes. Then, remove from the pan and enjoy warm or cooled completely.
