Indulge in quick and tasty almond-mocha muffins made with Gold Medal® flour. Ready in under an hour!
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 2 tablespoons unsweetened baking cocoa
  • 2 1/2 teaspoons baking powder
  • 1/2 cup packed brown sugar
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 tablespoon instant coffee granules or crystals
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup chopped roasted almonds
  • 1/4 teaspoon vegetable oil
Instructions:
  • Preheat oven to 400°F and lightly grease the bottoms of 12 regular-size muffin cups or line them with paper baking cups.
  • Combine flour, cocoa, baking powder, and salt in a medium bowl; set aside. In a large bowl, whisk together brown sugar, milk, oil, coffee, and egg until smooth. Gently fold in the flour mixture until just combined. Stir in chocolate chips and almonds. Divide the batter evenly among muffin cups.
  • Bake for 18-20 minutes or until a toothpick comes out clean. Remove muffins from the pan right away and let cool for 15 minutes on a rack.
  • Microwave glaze ingredients in a small microwavable bowl uncovered on High for about 45 seconds, stirring every 15 seconds, until chips melt smoothly. Drizzle over muffins.
