Classic mocha biscotti with coffee and chocolate, easily customizable with extra chocolate chips or almonds.
Ingredients:
  • 0.75 cup granulated sugar
  • 0.5 cup lightly salted butter, softened
  • 2 large eggs
  • 3 tablespoons finely ground coffee
  • 3 tablespoons cocoa powder
  • 1.5 teaspoons baking powder
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a baking sheet with a touch of oil.
  • In a large bowl, cream together sugar and butter until light and fluffy. Then, add the eggs one at a time, mixing well after each addition.
  • In a bowl, combine flour, coffee, cocoa powder, and baking powder. Whisk until well mixed. Gradually incorporate the flour mixture into the butter mixture, stirring until the dough comes together.
  • Gently oil a large square of aluminum foil. Place the dough on top and use the foil to roll it into a 12-inch log. Transfer the dough log to the prepared baking sheet, and gently flatten it to about 1 1/2 inches in height.
  • After baking in the preheated oven for 25 minutes, cool for 10 minutes. Slice the log into 12 biscotti using a serrated knife and place them upright on the baking sheet, leaving 1/2 inch space between each.
  • Place back in the oven and bake for an additional 12 minutes. Allow to cool completely for about 1 hour before storing the biscotti in an airtight container.
