Ingredients:
  • 300g good-quality dark chocolate, chopped
  • 125mls (1/2 cup) thickened cream
  • 40.00 ml freshly brewed strong coffee
  • 100g (1 cup) cocoa powder
Instructions:
  • Combine the chocolate, cream, and coffee in a heat-resistant bowl over simmering water, stirring until everything is melted and the mixture is smooth. Chill the mixture in the fridge for 2 hours until it's firm enough to shape into balls.
  • Prepare a tray lined with non-stick baking paper. Sift cocoa onto a plate. Shape small spoonfuls of the chocolate mixture into balls, about 2-3cm in diameter, then transfer them to the cocoa, rolling to coat. Place the truffles on the prepared tray. Refrigerate for at least 1 hour before serving.
