Indulgent mocha truffles, combining rich semi-sweet chocolate with instant coffee, perfect for Valentine's Day and cookie swaps.
Ingredients:
  • 1 (24 ounce) bag semi-sweet chocolate chips
  • 8 ounces cream cheese, softened
  • 3 tablespoons instant coffee granules
  • 2 teaspoons water
  • 6 ounces semi-sweet chocolate chips
  • 1 tablespoon shortening
Instructions:
  • Prepare a baking sheet by lining it with waxed paper.
  • In a microwave-safe glass or ceramic bowl, melt 24 ounces of chocolate chips in 30-second intervals, stirring after each melting, for 1 to 3 minutes. Stir in cream cheese, coffee granules, and water until smooth. Chill the chocolate mixture until firm, about 30 minutes before shaping.
  • Roll chocolate mixture into 1-inch balls and place them on the baking sheet. Refrigerate truffles until firm, for 1 to 2 hours.
  • In a microwave-safe glass or ceramic bowl, heat 6 ounces of chocolate chips and shortening in 30-second intervals, stirring after each interval, until melted, for 1 to 3 minutes.
  • Dip truffles in the luscious melted chocolate mix, then rest them on the waxed paper until they firm up, around 30 minutes.
