Ingredients:
  • 375g good-quality dark cooking chocolate
  • 65g butter, cubed
  • 60ml (1/4 cup) grappa
  • 60ml (1/4 cup) strong freshly brewed espresso coffee
  • 35g (1/3 cup) cocoa powder
Instructions:
  • Melt the chocolate and butter in a heatproof bowl over simmering water until smooth. Mix in the grappa and coffee, then let it cool for 10 minutes.
  • Transfer the mixture into a shallow non-aluminum dish, cover it, and refrigerate for 6 hours or until it's firm enough to shape into balls.
  • Prepare a tray with non-stick baking paper. Put cocoa in a small bowl. Shape 2 teaspoons of chocolate mixture into a ball and coat with cocoa. Arrange on the tray. Repeat with the rest of the chocolate mixture. Chill the truffles in the fridge for at least 1 hour before serving.
  • Before serving, sprinkle a little more cocoa on top and gently place the truffles in decorative confectionery cases.
