Ingredients:
  • 70g ground coffee beans
  • 580ml (2 1/3 cups) boiling water
  • 225g (1 cup) caster sugar
  • 500ml (2 cups) thickened cream
  • 4L (16 cups) full cream milk
  • 1/2 1L container chocolate ice-cream, softened
  • 1/2 1L container vanilla ice-cream, softened
Instructions:
  • Combine coffee and water in a plunger and let it sit for 5 minutes. Plunge the mixture. In a large heatproof bowl, mix the hot coffee with sugar and let it cool for 20 minutes. Cover with plastic wrap and refrigerate for 1 hour before serving.
  • Whip the cream in a large bowl using an electric beater until soft peaks form.
  • Combine milk, softened chocolate and vanilla ice cream, and chilled coffee mixture in a large serving bowl, stirring until well mixed. Gently fold in half of the whipped cream using a large spoon until incorporated, then repeat with the remaining whipped cream. Serve promptly.
