Elevate dessert with this decadent make-ahead chocolate-coffee mousse.
Ingredients:
  • 1 1/3 cups milk
  • 1 bag (12 oz) semisweet chocolate chips (2 cups)
  • 1/2 cup fat-free egg product
  • 1/4 cup brewed espresso (room temperature)
  • 1/4 cup sugar
  • Sweetened whipped cream
  • Fresh berries, if desired
  • Fresh mint leaves, if desired
Instructions:
  • In a sturdy saucepan, heat the milk over medium-high heat for 2 to 3 minutes until small bubbles form around the edges. Remove from heat.
  • Add chocolate chips, egg product, espresso, sugar, and salt to a blender. Blend on low speed for 20 seconds or until smooth. While blending on low speed, slowly pour in the milk and blend for 1 minute until smooth.
  • Divide the chocolate mixture evenly among 12 (5-oz) glasses. Chill in the refrigerator for 4 to 24 hours. Finish with a dollop of whipped cream, and adorn with fresh berries and mint leaves before serving.
