Mocha Muffins

Enjoy a decadent coffee-chocolate muffin.
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 2 tablespoons unsweetened baking cocoa
  • 2 1/2 teaspoons baking powder
  • 1/3 cup packed brown sugar
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 tablespoon instant coffee granules or crystals
  • 1 egg
  • 1 cup semisweet chocolate chunks or chips
Instructions:
  • Preheat your oven to 400°F. Grease only the bottoms of 12 regular-size muffin cups (2 1/2x1 1/4 inch) with shortening, or use paper baking cups to line the muffin cups.
  • Combine flour, cocoa, baking powder, and salt in a medium bowl and set aside. In a large bowl, whisk together brown sugar, milk, oil, coffee, and egg until well combined. Gently fold in the flour mixture until just moistened, then stir in chocolate chunks. Divide the batter evenly among the muffin cups.
  • Bake for 18 to 20 minutes, or until a toothpick inserted in the center comes out clean. Remove from the pan right away.
