Indulgent milk chocolate chip and oat cookies sweetened with coconut oil - perfect for a speedy snack or school lunch.
Ingredients:
  • 0.33333334326744 cup coconut oil
  • 0.25 cup brown sugar
  • 0.25 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup milk chocolate chips
  • 0.25 cup old-fashioned oats
Instructions:
  • Preheat the oven to a cozy 325 degrees F (165 degrees C) and prepare a baking sheet by lining it with parchment paper.
  • In a large bowl, mix coconut oil, brown sugar, and white sugar until creamy using an electric mixer. Then, blend in the egg and vanilla extract.
  • Combine the flour, baking soda, and salt in a bowl. Slowly incorporate into the coconut oil mixture until just combined. Gently fold in the chocolate chips and oats.
  • Shape 2 tablespoons of dough into a ball and place it on the baking sheet. Continue with the rest of the dough, keeping the balls about 2 inches apart.
  • Bake until cookies have a golden bottom in the preheated oven for 12 to 14 minutes.
