Coconut Pineapple Cookies

Transform traditional oat cookies with sweet, chewy flaked coconut and dried pineapple for a delicious tropical dessert twist.
Ingredients:
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter or margarine, softened
  • 3/4 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 2 cups old-fashioned oats
  • 1 1/2 cups flaked coconut
  • 1 cup chopped dried pineapple
Instructions:
  • Combine flour, baking soda, and salt in a medium bowl. In a large bowl, use an electric mixer to beat butter and both sugars until light and fluffy for about 3 minutes. Mix in vanilla and egg. Gradually add flour mixture to butter mixture on low speed until blended. Fold in oats, coconut, and pineapple. Chill dough in the refrigerator for 1 hour before proceeding.
  • Preheat the oven to 350°F. Scoop the dough onto ungreased cookie sheets with a tablespoon, spacing them 2 inches apart. Bake for 10 to 12 minutes or until lightly browned. Let cool for 1 minute before transferring to cooling racks.
