Deliciously tropical crushed pineapple and coconut cookies - bursting with flavor and texture!
Ingredients:
  • 0.75 cup chopped pecans
  • 0.5 cup sweetened flaked coconut
  • 1.25 cups rolled oats
  • 1 cup brown sugar
  • 0.5 cup unsalted butter, melted
  • 0.5 cup crushed pineapple, well drained
  • 1 large egg
  • 0.5 teaspoon almond extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C), and line cookie sheets with parchment paper. Spread pecans and coconut on a baking sheet.
  • Bake in the preheated oven until coconut turns very light golden brown and pecans are fragrant, around 5 to 7 minutes. Remove and cool for about 10 minutes. Keep the oven on.
  • Blend oats until finely ground.
  • Combine brown sugar, white sugar, and butter in a bowl, then incorporate pineapple, egg, vanilla extract, and almond extract.
  • Combine oats, flour, baking powder, and salt in a small bowl, then incorporate into the wet ingredients. Add toasted coconut and pecans, then spoon onto the prepared cookie sheets.
  • Bake until edges are golden, around 12 to 15 minutes in preheated oven. Let cool on cookie sheets for 1 minute before transferring to wire rack to cool completely.
