Delicious pineapple and coconut cake cookies, a guaranteed hit!
Ingredients:
  • 0.33333334326744 cup butter
  • 0.5 cup packed brown sugar
  • 0.25 cup white sugar
  • 1 teaspoon almond flavoring
  • 1.75 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 (8 ounce) can pineapple tidbits, drained
  • 1 tablespoon coconut flakes
Instructions:
  • Preheat the oven to 400°F (200°C).
  • Use an electric mixer to cream together the butter, brown sugar, and white sugar in a large bowl until smooth.
  • Incorporate the egg and almond flavoring into the creamed butter and sugar mixture by blending them together.
  • Combine the flour, baking powder, baking soda, and salt by sifting them into a bowl.
  • Incorporate the flour mixture into the butter mixture until well combined.
  • Incorporate the pineapple tidbits and coconut flakes into the dough gently.
  • Spoon dollops of the dough 2 inches apart on greased baking sheets.
  • Bake until beautifully golden, about 10-12 minutes in a preheated oven.
