Macadamia Nut Crusted Mahi Mahi

Crusted mahi mahi with macadamia nuts, served with tropical fruit and hot pepper sauce.
Ingredients:
  • 2 ounces macadamia nuts
  • 4 ounces plain bread crumbs
  • 6 (6 ounce) mahi mahi fillets
  • 4 ounces butter
  • 2 ounces shallots, diced
  • 4 cups chicken stock
  • 4 ounces pineapple, rough chopped
  • 4 ounces papaya, rough chopped
  • 4 ounces mango, rough chopped
  • 1 tablespoon shredded coconut
  • 2 habanero peppers, seeded
  • white sugar to taste
Instructions:
  • Preheat the oven to 375°F (190°C).
  • Combine macadamia nuts and breadcrumbs in a food processor until finely ground. Transfer the mixture to a plate and coat both sides of the fish fillets.
  • In a large skillet over medium heat, melt butter until sizzling. Cook fillets on both sides until nuts turn a beautiful golden brown. Transfer to a baking pan.
  • Cook shallots in a skillet until transparent. Add chicken stock, then combine pineapple, papaya, mango, coconut, and habanero peppers. Season with salt, pepper, and sugar. Simmer for 30 minutes until the sauce thickens. Strain to remove peppers, fruit, and shallots. Keep the sauce warm in a pan over low heat.
  • Place the mahi mahi in a preheated oven for around 10 minutes until it reaches an internal temperature of 140 degrees F. Next, remove the fish from the oven and gently drizzle it with the sauce.
