Elevate your fish fillet with a delicious nut crust for added flavor and crunch.
Ingredients:
  • 625.00 ml roasted macadamia
  • 375.00 ml fresh breadcrumbs
  • 2 eggs, lightly beaten
  • 10.00 gm water
  • 4 x 180g barramundi fillets
  • 56.88 gm olive oil
  • Lemon wedges, to serve
  • aioli (see note), to serve
  • Salad leaves, to serve
Instructions:
  • Use a food processor to finely grind nuts and breadcrumbs. Transfer the mixture to a shallow dish and season with salt and pepper.
  • In a shallow dish, gently whisk together eggs and water. Dip fish fillets in the egg mixture, then coat both sides with breadcrumbs by pressing down lightly with your fingertips. Place on a plate, cover with plastic wrap, and refrigerate for 20 minutes before cooking.
  • Heat oil in a non-stick frying pan over medium heat. Sear fish for 3 minutes on each side until golden.
  • Plate the fish with a side of tangy lemon, creamy aioli, and fresh salad.
